I show you how to make a Choux Pastry(dough), the simple way.

60ml water
60ml milk
50g unsalted butter, cut into cubes
1/2tsp salt
1/2tsp sugar
75g plain flour, sifted, (all purpose flour (or cake flour for delicate choux))
3 medium eggs, ROOM TEMPERATURE is vital

1. Place water, milk, salt, sugar & butter into a saucepan over medium heat.
2. Allow butter to melt, then as soon as mixture comes to the boil, tip in flour at once. Stir quickly & vigorously with wooden spoon until smooth.
3. Continue stirring slowly over the heat for a few minutes.
4. Tip mixture into a bowl, spread out slightly and leave to cool for a good 5 minutes.
5. Add first egg, beat until smooth.
6. Add second egg, beat until smooth.
7. Test mixture, if not yet correct consistency, add a little of the remaining egg, beat until smooth, test again. Continue, adding a little egg at a time until arrive at correct consistency.
8. Pipe into desired forms and bake at 190 C fan (375 F) until puffed up and golden brown.
9. Leave to cool on wire rack.
